Recipe: Kodo Khichdi (Perfect for Diabetes-Friendly Meals)

Ingredients:

1 cup soaked Kodo millet, ½ cup moong dal, 1 cup mixed vegetables (optional), ½ tsp turmeric, ½ tsp cumin, Salt to taste, 1 tsp ghee.

How to Prepare:

Wash and soak millet for 2–3 hours.

In a pressure cooker, add millet, moong dal, vegetables, turmeric, cumin, salt, and water.

Cook for 3–4 whistles.

Add a spoon of ghee before serving.
