Thalipith is a traditional Maharashtrian dish made from a combination of flours, typically served as a flatbread or savory pancake. It is often enjoyed with yogurt, chutney, or pickle
Key Features:
- Multi-grain base: The primary flour used in thalipith is a mix of different flours, such as jowar (sorghum), bajra (pearl millet), rice flour, wheat flour, or chickpea flour. This combination enhances its nutritional value.
- Spiced and savory: Thalipith is flavored with various spices like cumin, sesame seeds, garlic, ginger, and coriander. It can be made spicy or mild based on preference.
- Customizable: You can add vegetables like onions, carrots, and spinach, or even herbs like fenugreek leaves (methi) to the dough for added flavor and nutrition
-
Simple Recipe:
- In a large mixing bowl, combine the flours, cumin seeds, carom seeds, turmeric, chili powder, salt, and any other desired spices.
-
Add finely chopped onions, coriander leaves, and sesame seeds (if using). Mix well.
- Slowly add water, a little at a time, and knead into a soft dough. The dough should be pliable but not sticky.
-
Divide the dough into small portions and roll them into balls.
Using your palms, flatten the dough ball into a round, disc-like shape. You can also use parchment paper or a rolling pin.
-
Heat a griddle or tawa on medium heat and drizzle a little oil. Place the flattened dough onto the tawa.
-
Cook on both sides until golden brown and crisp, pressing lightly with a spatula to ensure even cooking.
-
Once done, remove and serve hot with yogurt, chutney, or pickle.
Health Benefits of Thalipith:
- Rich in Fiber: The use of millet and sorghum flour makes thalipith high in dietary fiber.
-
Good Source of Protein: Chickpea flour, included in the recipe, adds protein, which is essential for muscle repair and overall body functions.
-
Low Glycemic Index: The grains used in thalipith have a low glycemic index, helping maintain stable blood sugar levels.
-
Packed with Micronutrients: The addition of vegetables like onions and herbs adds vitamins and minerals, including folic acid, iron, and vitamin C.
